These delicious golden cookies are vegan and can be whipped together in no time. They are a JSHealth app favourite that we are sure you will love.
Oat & Coconut Cookies
- ¼ cup coconut oil, melted
- ¼ cup maple syrup
- 1 tsp baking powder
- 1 cup rolled oats
- ½ almond meal
- ½ cup desiccated coconut
- 2-3 tbsp warm water
Preheat the oven to 160°C or 320°F. Line a baking tray with baking paper.
In a large mixing bowl, combine the melted coconut oil, maple syrup and baking powder. Whisk until incorporated.
Add the rolled oats, almond meal and desiccated coconut into the wet ingredients. Stir to combine, before adding in 2-3 tbsp of warm water. The mixture should be sticky and slightly wet.
With damp hands, roll tablespoon-sized amounts of dough into balls then flatten slightly on the lined baking tray.
Bake in the oven for 15-20 minutes or until golden.
Remove the tray from the oven and leave the biscuits to cool until they are firm to the touch.
Keep stored in an air-tight container.
